Today’s lesson comes from that wonderful restaurant that serves huge portions of food. Yes I am talking about Cheesecake Factory. Seriously we as Americans love our portion sizes but they really push the envelope. If you need a hint how big their portions are just take a look at their menu. How many pages? I mean it is a book!
Today’s target is their Cheesecake Factory Wasabi Crusted Ahi Tuna

Oh this is an appetizer, not your entree! Not to just pick on this appetizer, all appetizers usually are deep fried, refined carbs and cheap fat.

Tuna Satay Skewers
- 1/2 tbsp peanut or vegetable oil
- 1 tbsp minced fresh ginger
- 1 clove garlic, minced
- 2 tbsp peanut butter
- 1 cup light coconut milk
- 1/2 tbsp low-sodium soy sauce
- Juice of 1 lime
- 1 tsp sriracha or other hot sauce
- 1lb ahi tuna, cut into 8 long pieces
- 300 calories
- 8g fat (2g saturated)
- 270mg sodium
- Cost per serving $3.32
- Makes 4
- Soak 8 wooden skewers in cold water for at least 20 minutes
- Heat the oil in a medium saucepan over a medium heat
- Cook the ginger and garlic until lightly toasted, about 1 minute
- Add the peanut butter, coconut milk and soy sauce
- Simmer on low heat for 10 minutes
- Add the lime juice and sriracha and remove from the heat
- Heat a grill or stove top grill pan until hot
- Thread each piece of tuna onto a skewer and brush all over with the sauce
- Cook for 2 minutes per side until charred on the outside but still pink in the center
Saves 1,450 calories and $18.63!
